At 92 proof as our oldest whiskey, this is the first WhistlePig item completed in Vermont Estate Oak harvested right from our farm. Vermont oak has more rings than the standard oak used in whiskey barrels, and each ring is a chance to endure more flavor and detail in the whiskey. With a score of 97 points from Wine Enthusiast and perfected over 15 years, we are proud to call this a pure expression of Vermont?s best.
BCS Gray Label Whiskey began with two selections of 24-year Canadian whiskey barrels: one set was fruit-forward and tropical, and one was woody, with a light floral aroma. A portion of the fruit-forward blend was transferred into Oloroso Sherry barrels and a portion of the floral and earthy blend was transferred into Armagnac casks. The remaining whiskey from the two groups was then combined to mingle. When the timing and flavor from the finishing casks peaked, the three components were carefully blended together.
The mature, spicy whiskey is front and center, reminiscent of wheat fields edged with wildflowers. There is a rare and noteworthy concentration of aroma, enriched with a candy sweetness and leafy earthiness from the finishing casks, that calls to mind a toasty Belgian waffle.

This rare whiskey was bottled under the strict tenents of the Bottled-in-Bond Act of 1897. Final cereal recipe after mixing the forty-two barrels with four different recipes is; 78.6% rye, 11.9% wheat, 4.8% corn and 4.8% barley. The barrels have matured between three and six years, partly in warehouses with controlled climate conditions. All to create a whiskey with this unique rondor and bouquet.

Volume One of the Rye Project is in collaboration with Willett Family Estate. The Volume One blend consists of a very low-rye (51%) whiskey aged for 6 years in new American oak, blended with a more aggressive 6 and 7 year Rye (74%) whiskey distilled by the Willett Distillery. By design, this Rye blend reads sweeter than most Rye whiskies, while still being layered, spiced, and elegant on the back palate. The custom cork top was inspired by the knob of a baseball bat that is a family heirloom of Jon Buscemi. The textured label was created in partnership with a bespoke wine label producer in Sonoma County. More info available in Special Projects.
Since the release of Old Forester Rye in 2019, fans of the brand have been clamoring to try it at barrel strength, and weʼre excited to deliver. For the first time in the brandʼs 150 year history, Old Forester is elated to present this new expression, unfiltered, as a single barrel at barrel strength. As such, each barrel will have it’s own unique tasting notes and various proofs – but all distinctly Old Forester Rye. The 2021 vintage of Pinhook’s flagship rye brims with aromas of apricot, cinnamon, and eucalyptus followed by a rich palate of candied licorice, caramel, and orange peel.

To enhance this classic style, we incorporate small amounts more barley-forward rye and choice barrels from both Kentucky and Tennessee. This brings a full, round mouthfeel and flashes of buttery sweetness to an otherwise spicy and tightly focused Rye Whiskey.’
With an additional year of age, this 5-year-old rye brims with aromas of butterscotch, cardamom, dates and grapefruit, leading to a rich palate of dark caramel, licorice, gingerbread, and black pepper.
We finished our straight rye whiskey in Extra Añejo Tequila barrels. The result is remarkably unique tequila finished whiskey with notes of agave and vanilla on the nose and honey, peppercorn and orange citrus to taste. Pairing tequila and whiskey is always a risky move, but this was a risk worth the reward.
This American Oak Aged Whiskey Distilled from a Rye Mash is at least two years old. Mostly rye grain and a touch of barley, this rye is a spicy summer rye and makes some great cocktails. A good bitter, or a splash of vermouth or ginger beer goes a long way.
George Dickel Rye Whisky is the only rye finished in the chilled charcoal-mellowed style that has made our whisky distinct. Distilled in Lawrenceburg, IN, George Dickel Rye is made from 95% rye and 5% malted barley.Our rye is spicy with an exceptionally smooth finish and is a great choice in classic cocktails like The Old Fashioned and Manhattan.
”A few years ago, Trey was out with a few friends and Chef Edward Lee. As they began to order some different dishes for dinner, he and Edward started talking about the pairing of bourbon and food, specifically spicier dishes like his Korean Fried Chicken. The group started tasting bourbons together with food and realized that they really liked the notes that were brought out in each one. They knew they had a good idea. Over the next 9 months, Trey and Edward would get together and try his food along with a number of different bourbon recipes, trying to marry them together to get the right flavors for the recipe. They couldn’t find exactly what they were looking for until Trey picked up a bottle of Jefferson’s Rye and decided to mix it with one of our straight bourbon offerings. The combination of bourbon and rye became a perfect combination of fruit flavors up front and the spice of the rye at the end. It’s a great pairing whiskey for big, spicy food.”
Our Kentucky Straight Rye Whiskeys are offered as a Cask Strength release. Once our traditional sweet mash process is distilled in our column stills we enter the barrel at the lowest entry proof we know of in Kentucky. We barrel at 100 proof and 105 proof to highlight the balance of the distillate and alternate solubility expression we get from the barrel at a lower proof.
