Its aging recalls that of those wines that crossed the oceans in the s.?XVII to the colonies and returned to European ports with greater complexity and silkiness.
Elaborated from Oloroso and Pedro Xim?nez.?After aging separately in their respective soleras for 12 years, the two wines combine to re-age in a Solera of 45 boots located in the Sacristy of the winery.
