Matured for 14 years in American white oak ex-whiskey barrels, the spirit is then shifted to a 30 year old Matusalem oloroso sherry butts for a further four years. These sherry butts from the incredibly famous sherry house Gonzalez Byass are chosen solely for The Dalmore.
