This white vermouth is a masterpiece of alchemy, crafted by winemakers-turned-alchemists, Toni Coca and Sílvia Pujo. The result of a four-year research journey, it exudes a distinct Mediterranean character, derived from the use of white Grenache wine and mistela as its base. The infusion of local aromatic plants such as rosemary, thyme, and fennel, along with balsamic plants like green anise, sajolida, and laurel, elevates its flavor profile to new heights. The maceration process involves a captivating blend of over 30 different plants, roots, spices, and flowers, including lemon and orange peels, gentian, angelica, licorice roots, cinnamon, cloves, turmeric, chamomile, elder, and maidenhair flowers. This fusion of ingredients creates a vermouth that is complex, fresh, delicate, and boasts a bitter yet persistent and pleasing character.
