Way back in the 1700’s a taxation was imposed on malted barley , Irish Whiskey makers started to blend barley with other grain to avoid or at least reduce the tax bill! Original blending used 70% malted barely and 30% grain … over time blending has evolved and oftentimes more and more grain is added reducing the quantity of the premium malted barely in the whiskey.
