It gives us great pleasure to introduce the beautiful Balmorhea. This magnificent Texas Straight Bourbon Whiskey is bold but majestically-crafted, having been aged four years in new American white oak barrels, then transferred to a second new American white oak barrel, and aged for one year. Simply put, this 2-time US Micro Whisky of the Year and San Francisco Double Gold winner is bourbon candy in a bottle.
The 15th edition of Parker’s Heritage Collection features the same mashbill as Bernheim Wheat Whiskey, but aged in specialty barrels that were charred for 90 seconds, as opposed to our traditional 40 seconds. Continuing the award-winning series of heavy char releases, these “Level 5” barrels were aged for a full 11 years, where the heavier char allowed the whiskey to penetrate further into the barrel, bringing forth honey and subtle cinnamon spice. The 75 barrels reached peak maturation on the sixth floor of Rickhouse Y. It is bottled without chill filtration at 122 proof. Developed by Heaven Hill Distillery’s own Master Distillers, Wheat Whiskey is the first new style of American Whiskey to be introduced since Prohibition.

The first experimental release of 2021, this Baijiu-style spirit, although distilled like a whiskey, is produced using the traditional Baijiu ingredients of sorghum and peas. After aging the distillate for 11 years in three separate casks–uncharred, charred, and toasted white oak–the spirits were married together and bottled at 90 proof. The nose is rich and savory with notes of chocolate, dark cherries and stone fruit. The sorghum and peas provide a palate of confectioners sugar, followed by a sweet toffee finish.
The Chicago Rabbinical Council (cRc) partnered with Buffalo Trace Distillery to make this batch of Straight Rye Whiskey. Distilled from the same high quality grains as other straight rye whiskeys from Buffalo Trace, this Kosher spirt was aged in specifically designated Kosher barrels.

Finest Kentucky Oak is a limited-edition straight rye whiskey; it starts with the distillery’s standard rye whiskey, an MGP product, which then undergoes a secondary maturation for an undisclosed length of time in new barrels made from Kentucky oak. The staves for these barrels were air-dried for 24 months—substantially longer than the standard six-month air-dry, according to a prepared statement from the distillery—and then given a light char.
BASTILLE 1789’s innovative distillation process combines traditional and cutting- edge techniques to express the natural characteristics of our terroir, water and malt.
BASTILLE Single Malt sources its unique taste profile from the Limousin Oak cask style that previously aged some of the finest wines such as Sauterne, Burgundy, Sherry as well as a French Spirit. Its delicate aromas and smooth profile make BASTILLE 1789 Single Malt a “ONE OF A KIND” experience and a category on its own.
Three hundred and sixty-four days. That’s how long our rye whiskey waited in Ice Cider Casks, mingling with the oak until it got a perfect, crisp apple finish. This rare spirit grabs your attention with bold peppery and cinnamon notes, and then soothes your tastebuds with a sweet finish of brown sugar, apple and warm oaky undertones. This perfect winter whiskey is our first rye Cellar Collection release and is available for a limited time.
The Last Rye spreads its wings for one final time.
The original Kentucky Owl Whiskey was made by Charles Mortimer Dedman in the late 1800s. After every drop of this “Wise Man’s Whiskey” in inventory was, ahem… “confiscated” by federal agents under mysterious circumstances at the start of Prohibition, the C.M. Dedman Distillery faded into history. But just a few years ago his great-great-grandson — Dixon Dedman — revived the brand, creating the Kentucky Owl Bourbons and Ryes as small batch, super-premium Spirit blends.
Fans clamor for their premium Rye releases. They win awards and taste amazing, going out of stock quickly. TheLast Rye Batch is the final entry in the series, marking a special and bittersweet occasion. With the popularity of Rye growing, Kentucky Owl’s stock has dwindled. This release had them reach deep into their inventory for a 10-year-old Kentucky Straight Rye and some Whiskey aged 13+ years. Once the juice has left its new charred oak barrels, it’s been bottled at 112.8 proof, making it a proper sweet, oaky, bright, and spicy release — and one that’s bound to go fast.

While we regularly sample all our Michter’s barrels to see how our whiskey is aging, we pay even extra special attention to our barrels once they are over 17 years old. At Michter’s we consider 17 to 20 years the “Fork In The Road Point” when certain barrels of whiskey can achieve an extraordinary level of quality. It is these particular barrels that our Master Distiller Dan McKee personally selects for our very limited bottling of Michter’s 20 Year Kentucky Straight Bourbon.
