These wild and huge agave are of the inaequidens family, harvested in the hills just past Etucuaro. These massive agaves have low brix and yield, and due to those complexities in working with Bruto we had to inoculate the fermentation from Pulque made from this same maguey.

The Ensamble uses Papalote (A. cupreata) as a base and is complemented by Espadín (A. angustifolia) and Tobalá (A. potatorum); This MONTELOBOS® expression offers an explosion of contrasting flavors such as pink pepper, chamomile and candied apple. It has a body and an acidity in the mouth that highlights smoke and fruit.

Derrumbes Zacatecas is made from 100% Tequilana Weber in the village of Huitzila, Zacatecas, right across the majestic barranca (canyon) that divides it from the valley of Tequila. Being so close, Zacatecas is mostly known for mezcal produced in the fashion of Tequila. The Bañuelos family however, are among few mezcaleros in Zacatecas that produce traditional mezcal. Pit roasted, tahona ground and spontaneously fermented, Derrumbes Zacatecas is a rare opportunity to travel back in time to experience a more ancient expression to Blue agave.
In the spring of 2005, Del Maguey founder Ron Cooper and local farmers planted a hectare of young espadin in Teotitlan del Valle. Placed on ancient terraces at the step of the Zapotec village’s sacred mountain, Quie Guia Betz, or Cerro Picacho, the terraces were named Ru’u Dain in Zapotec, or Mouth of the Mountain in English, and Boca del Cerro in Castellano. In exchange for renting the land and providing the raw materials, Ron would control 50% of harvest when plants matured, and the farmers the other 50%.
This agave is cultivated and wild for this expression. We roast 90 hours under ground, straight into maceration and fermentation, ferment 120 hours, and proceed to double distill.
This is all wild Agave Cupreata that we roast for much longer, and (fully matured) capon. We let the agave rest a week after roasting, used much more bagazo in the tinas for the fermentation, waited longer for it to ferment, applied only gentle touches at initiation of fermentation, and then distilled with different cuts. Overall this expression is a beautiful roller coaster.
An Agave Sp (unspecified agave) that is cultivated from the area of Jiquilpan and Sahuayo. It is Locally referred to as Cenizo, due to the color of the pencas, but the CRM recognizes it as Manso Sahuayo. This seems to be a heavy favorite amongst agave enthusiasts.
A complex and fresh mezcal, with aromas of herbs and roots. On the palate it is floral, herbal and at the end a light earthy and sweet flavor.

Fidencio Clasico Mezcal 750ml
Crystalline color with silver sparkles, agave, citric, and herbal aromas with a touch of oregano, mint, and anise. Intense richness, yet not agressive. Pleasant acidity that leaves a sense of freshness, long aftertaste, high viscosity, soft, sweet, and with mineral notes reminiscent of the soil of the potosiano plateau. Unsmoked.

The red in the flag represents the blood of the leader, the black cross represents the mourning for the priest Dolores, the bones honor his remains.
