Wild fennel grows profusely on the Amalfi coast, as it does in California. The seeds from the tall plants are harvested by hand in October when the seed-heads are dry, dried, sifted, macerated in pure alcohol for about 40 days, then blended with sugar and bottled. Great digestivo (substances found in fennel-seed are said to be good for the digestion) and craft cocktail ingredient. Drink cold but not iced.
Cynar is an artichoke based bittersweet liqueur known for its versatility and distinctive flavour; its taste is enriched by an infusion of 13 herbs and plants. The name of the drink derives from Cynar scolymus, the botanical name for artichoke, as artichoke leaves lend the distinctive flavour.
The secret recipe, which has remained the same since its creation, is based on some of the natural substances found in the artichokes, including ‘cynarine’.

Alessio Vermouth Chinato is also based on a classic recipe from the late 19th century combined with the additional bittering of Cinchona bark and more than 25 other balancing herbs, including Grande and Petite Wormwood, and reflects an almost-lost style of bitter vermouth. The slightly lower ABV than the Vermouth di Torino Rosso helps highlight this Chinato vermouth’s backbone and aromatics, making it a complex alternative to sweet vermouth in cocktails as well as excellent on its own. 16.5% ABV

The brief aging in chestnut barrels serves to accentuate the stringent, almost sapid, note. The color is deep amber, given by the extractions of the plants used. The taste is rich and herbaceous, with intense and round notes; free of dyes and with a very low percentage of sugar.
