The Fall 2022 Distiller’s Cut is our mesquited-not-peated whiskey, originally aged in New American White Oak, then finished in Pineau des Charentes casks. Pineau des Charentes is a regional aperitif of western France – made from either fresh, unfermented grape juice or a blend of lightly fermented grape must, to which a Cognac eau-de-vie (unaged grape brandy) is added and then matured for around two years in used oak. The taste is predominantly sweet, but is balanced by both the acidity of the grape juice and the increased level of alcohol. This is an Arizona-only release.
Tasting notes:
On the Nose:
Candied Ginger. Caramel. Petrichor (a pleasant smell that frequently accompanies the first rain after a long period of warm, dry weather).
Neat:
Burnt sugar up front, leading into bright grassy notes. Finishes long and velvety with milk chocolate and freshly cut grass.
On the Rocks:
Vegetal notes move to the forefront, complementing the freshly cut grass served neat. This results in a brighter dram. Black pepper becomes prominent, ending with the same milk chocolate finish.
