Tasting Notes
Nose: Gathering clouds of classic Irish Whiskey stone-fruit aromas – golden plums and ripe pears – carry with them wild flowers reminiscent of the fertile Burren in County Clare. There is an intense sweetness too, with tupelo honey and a dusting of coconut.
Palate: The central orchard flavours start with pale green apples before shifting to ripe apricot and a hint of dark plum. There is sweetness with complexity: vanilla sugar, crystalized ginger, and high-cocoa dark chocolate studded with honeycomb. There are also earthy notes – umami mushroom, toasted sesame oil and beetroot, along with sphagnum moss and fertile dairy pasture.
Finish: There is a fresh spice and pepperiness – like nasturtium and other edible flowers. Wildflower honey returns along with more earthy notes … like a day in a peat bog cutting turf.
