Octomore Edition 07.3 Whiskey
Octomore 07.3 is our uber-provenance single malt whisky made from malting barley grown on our companion James Brown’s Octomore farm. 07.3 was distilled in 2010 from grain harvested from a solitary field called Lorgba in 2009. The malt was peated to 169ppm and the spirit it gave developed here on Islay for its entire life with cask of American oak being hitched to cask from the colossal Spanish wine region area of Ribera del Duero.
Octomore Edition 07.3 Whiskey Tasting Notes
NOSE — Opens with the unmistakeable hit of peat smoke taken after by ozone and salt spray, then lemon cake. The marine notes characteristic of maturation by the shores of Loch Indaal. Warm the glass in your hand and hold up as apricot jam, cinder toffee, vanilla, buttercups and lilies rise and intertwine.
PALATE — The surface is a striking demonstration of the distiller’s specialty, rich and silk smooth in spite of the high quality. At first there is salt on the lips with sweetness from the American oak joining with the peat smoke. A second taste reveals the core of the measure through layers of peaches, apricot, melon and ginger syrup. Once there, malted Islay grain and toasted oak compliment oral notes of wild thyme, mint and buttercup.
FINISH — Everything about this dram speaks Islay and our slow distillation, the peat smoke and salt splash intense yet delicate and complex. The Islay developed grain gives a character like no other. The finish of numerous long hours of diligent work, determination and expertise, long after the glass is unfilled the peat embers from this whisky stay alive on your taste buds.
MOOD — Walking an Islay shoreline with the breeze at your back. Salt-loaded sand blowing past your feet. Returning home to a peat re and the glow of the family hearth. Happiness.
