Stellum Black Bourbon is the next step in Stellum Bourbon’s evolution. By incorporating reserve barrels from our stocks with the original Stellum Bourbon blend, we created a bourbon that delivers robust flavor alongside profound complexity. The result is an expression both entirely new and deeply familiar, with roots firmly planted in Stellum Bourbon.
‘Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile.’
‘The identity of Stellum Rye is rooted in a tried and true 95% Rye Indiana mash bill. To enhance this classic style, we incorporate small amounts more barley-forward rye and choice barrels from both Kentucky and Tennessee. This brings a full, round mouthfeel and flashes of buttery sweetness to an otherwise spicy and tightly focused Rye Whiskey.’
This release celebrates the Fibonacci sequence, a series of numbers, each the sum of the two previous numbers. Six separate rye blends were combined in accordance with this sequence. Bottled at cask strength (115.12 proof).
This inaugural release of the Equinox Blend was created using Stellum Bourbon. The distillers layered in rare sets of bourbon barrels, step by step, until the evening of the Vernal Equinox, when the blend was completed in honor of the changing seasons and bottled at cask strength (117.26 proof).
