This is a recipe inspired by the Old Tom Gin, but with a Oaxaca twist. Our GIN has a Gracias a Dios agave spirit as a base, macerated and distilled with 8 botanics. Then we age it in oak barrels for 3 months, where we add agave espadín juice to give it a sweet touch.
Agave Gin GAD is a recipe inspired by the 32 states of our country with a base of GAD agave spirit. We macerate the botanics with the agave for 48 hours and then we distill it thrice in our workshop in Oaxaca.
This is a recipe inspired by the diversity of our land: Oaxaca. We use our GAD agave spirit as the base, then we macerate the 8 botanics: juniper and 7 botanics from Oaxaca: avocado leaf, yerba santa, cacao and Oaxaca tangerine amongst others; then we make a triple distillation.

This is a unique mezcal made by people that are very special to us.
A monumental and unique agave, whose piña grows outside of the earth. Strong moss and humid aroma, persistent flavors of clove, white pepper, cinnamon and apples. Excellent pairing with chicken, salads or Mediterranean menus.
Wild agave with a strong identity, reflected in its after-taste. Kind and charming smokiness, with mineral elements, grapefruit skin and lime, dried fruit and mild notes of humid earth. Relaxing flavor excellent pairing with pastas or meat.
Vegetal and aromatic, with notes of leather, smoke and peat. Deep and long lasting, nuanced; smoke on the rise. Balanced palate, complex with a discreet integration of fruits, spices and notes of lime wedge. Perfect density. Vegetal / herbal fading, with nice tones of agave. Pepper and thyme on the palate, balanced with sweet notes of agave, slightly tropical with mint notes. Good lingering ending.
Special edition, each year made with a different fruit. For 10 years, Oscar Hernández gave a mezcal with fruits to the Priest of Matatlán as a gift. This year, we decided to make a special batch with pineapple. We share this mezcal as a symbol of friendship, made with the best fruits of Mexico.
Wood enamel and spiced oak, with wild herbs and citric essence. Spices, smoke and oak controlled by notes of mint and fruit. Balanced and fragrant with enjoyable notes of earth and good development in palate.
Smoke and spice right off the bat, followed by fruit and a slight astringency. Same on attack, with spice rising and smoke ever-present; in the palate spices and smokiness give way to the sweet fruits and a hint of citrus. Dry and spicy on the finish. Well balanced and great flavor profile.
