CAN 03 opens with citrusy front notes of lemongrass, lemon myrtle, and Andaliman pepper. Carob, coffee chaff, and golden Yunnan tea provide a warming earthy depth with the fragrant coconut-like fig leaf rounding out this highly refreshing blend.
Delicately fizzy, CAN 01 leads with an acidic gooseberry flavor balanced by a flowery oolong tea, and rounded out by freshly cut toasted birch and an undercurrent of pomelo zest.
SOKA combines distillates of fermented fresh sorghum juice and syrup. The fresh juice lends springy, green flavors of melon, cucumber, and green apple, with the syrup bringing forward darker aromas of harvest, and notes of hay and toasted honey. The use of a third fermentation inspired by the production of Jamaican rum contributes a touch of fermented grass and brininess, binding everything together.

The smoky Pasilla Mixe chili is the sole botanical and the source of all the complexity in Ayuuk. We source it directly from Mixe farmers in the mountains of Oaxaca, Mexico, and macerate it in a spirit made from Danish heritage purple wheat and pilsner malt. After distillation the best fractions are rested in a sherry Oloroso cask, allowing the flavors to infuse and mature with each other, giving a smooth, distinct and savory finish.
The Plum, I Suppose relies on the balance between two very different components. The kernel inside the plum stones is the foundation of this spirit, lending a marzipan, bitter almond flavor. Distilled marigold kombucha contributes floral and tannic notes somehow reminiscent of plum skins.

Fuck Putin And His Stupid Fucking War is a riff on a white negroni. The subtle flavors of gentian work beautifully with the high notes of The Plum, I Suppose, making for a light and floral Negroni. All proceeds go to support Ukraine and its people.

Aging for 2 years and 10 months (since December 2018) in an ex-bourbon cask. The beautiful notes of our koji based spirit Helena became the golden Ehime Cask 01 – even more complex with an American oak character and layers of spiciness and sweetness that navigates from dry fruit to light vanilla.
Although Ehime Series, Cask 01 has been resting at 55% ABV and developed a strong and flavorful character. This expression has been bottled at 46% to allow the flavors to open up and for the subtitles of the cask and spirit to shine in unison.
