Produced in our cellar located in Domfront, Le Domfrontais by Christian Drouin is a blend of Calvados aged between 3 to 5 years in small oak barrels.
The originality of the calvados Domfrontais Apellation comes from the high percentage of perry pears and its simple distillation in a column still.
The pear trees of the Domfront region, sometimes centuries old, are large trees that produce small fruits with subtle aromas and frank acidity. These pears (about 60% of the blend along with apples) bring freshness, elegance and a crisp taste in a particularly fruity Calvados.
Amber color. Rich, generous, highly complex nose with baked apple, brown butter and toasty notes. Cooked almond develops with the second nose. Entry offers exceptional volume that is both opulent, rich and dense. Very long on the palate.
Double distillation in a copper pot still. Aged in old calvados casks and former sherry casks. Amber color. A rich nose with silky cooked apple and cider flavors. Hints of almonds. The mouth is fresh with a great balance, delicate a round finish. One can feel the print of the Port cask on a finish of candied rancio.
Blend of Calvados aged 18 years in small oak barrels.
Amber colour, flamboyant, complex and balanced bouquet, its fruit aromas melt into a world dominated by wood and spices; round, very long in the mouth.
To be enjoyed after a good airing in the glass. Perfect with a cigar.
The appellation requires a minimum ageing of 14 months in oak barrels after the blend is made. However our Pommeau de Normandie is aged from three to four years. This extra ageing enables us to obtain a better balance with no apparent alcohol. We also take particular care in the choice of the apples used so as to obtain the perfect flavor, neither too sweet nor too heavy.
Calvados Pays d’Auge distilled in 1981 and kept in oak casks ever since. In the mouth, powerful and round at the same time, very persistent.
Amber colour with orange reflections. A powerful and virile nose from which aromas of nuts and acacia wood emerge. The palate is that of a dry calvados , marked by rancio. This vintage is typical of an old calvados Pays d’Auge.

Flavours open out gradually on the palate, fruit aromas develop first (grapefruit), then come floral aromas. After aeration, palate confirms nose : fruity, delicate, well-balanced. Long-tasting.
Honey and flowers. This Calvados was double distilled. Its traditional ageing was followed by a one year stay in a former “Muscat de Rivesaltes” cask.
Delicate, tender nose with honey and flowery aromas at first and more intense almond and Morella cherry fragrances later. Harmonious, gourmet, supple mouth with a rich gingerbread finale.
Double distilled, this Calvados has undergone typical ageing in old Calvados casks followed by one year maturing in former Sherry casks. Smooth, rich nose with hints of dried and candied fruit such as prune and Morello cherry. Some confectionery aromas as well. Fat, full-bodied mouth with supple, blended tannins. A Calvados with a lot of structure and a hint of bergamot as a finale.
Double distillation in a copper pot still. This Calvados was aged in former sherry casks. Amber robe, nose typical of spirits aged in Oloroso casks, with honey and brown sugar aromas. Full-bodied, rich and lasting on the palate.
Aged in old calvados and cognac casks. Dark amber colour. Round nose with orange, ripe peach and quince hints and grilled aromas in the background. Full, rich long-tasting mouth.

Long Pond Angels is a 14 year old calvados Pays d’Auge which we have finished aging for 7 months in old French oak casks that previously contained the 1995 Jamaica Long Pond ITP Très Grand Rum.
Bottled at 45%. vol , particularly rich, the nose is suave and blends notes of brown sugar, melon, papaya and apple. The palate has good acidity, with vanilla and pepper notes and a long finish of banana and apple.
Calle 23 Angels, is a 10 year old Calvados Pays d’Auge which we have finished aging in two old Calle 23 Tequila casks. These casks had previously contained Tequilas from the Los Altos region produced from Tequilana Weber agaves.
In the search for a perfect balance between agave and apple, Calle 23 Angels is the blend of a finishing in Calle 23 casks in a first filling of 13 months, and a second filling of these casks with a 4 month maturation.

The nose is frank, marked by apples and candied fruits with notes of light tobacco at the end of the glass.
The palate is straightforward with apple skin flavours on the finish.

Produced in the Pays d’Auge from bitter, bitter-sweet, sweet and sharp cider apples by double distillation in copper stills, RĂ©serve des Fiefs is a blend of several Calvados mostly aged in small used oak casks.
It offers a harmonious balance between the dominant fruit fragrance and the first spicy notes.
Produced in the Pays d’Auge from bitter, bitter-sweet, sweet and sharp cider apples by double distillation in copper stills, VSOP is aged in small previously-used casks, including some former wine casks. The blend also contains some spirits aged in former fortified wine casks, adding further sweetness and complexity.
VSOP thus offers an appetizing fruitiness over ripe apple flavours, combining smooth elegance with the first hints of spices.

The blend also contains some spirits aged in former fortified wine casks and brandy casks, adding further sweetness and complexity.

From a plot of the Domaine’s orchards located at Hiautre, in Gonneville sur Honfleur, La Blanche Bio 46% has been produced from more than 20 historical varieties of cider apples.
When in 1942 the «Appellation Calvados Pays d’Auge» was created its regulations imposed no minimum aging.
In those days, most Calvados was consumed uncoloured. It was called “La Blanche”. Then, step by step, a minimum 2 year aging in oak casks was required. Now Calvados Christian Drouin offers a new start to La Blanche. Copper still double distilled and produced from over thirty varieties of cider apples.
