Barrell Bourbon Batch 032 began with a balance of two sets of barrels: a selection of 5 and 6-year-old barrels with a creamy and tropical profile and a selection of 6, 7 and 10-year-old barrels vatted for their complex, old, woody character. These two sets of barrels were slowly blended over three months. A small group of spice driven 7-year-old barrels with notes of cinnamon toast, coffee bean and chocolate were then carefully added to complete the blend. The result is a decadent and rich bourbon with layers of spice and nuttiness.
ABV: 57.67%
‘Barrell Seagrass is an ode to coastal memories, blended to evoke the joy of a day on the beach and an evening listening to the soothing rhythm of waves. Hot sun, brisk air, dry sand, and oceanside vegetation are brought to mind. A ripe and inviting tropical nose and grassy, bright body evolve to a finish as long as the view down the shore on a clear day. ‘
Armida began as an experiment, trying to make a dream whiskey come to fruition.
Barrell Craft Spirits Gold Label Bourbon is a blend of 16- and 17-year-old straight bourbons. Barrels for this release were selected from four different collections: cherry bomb barrels with a rich mouthfeel, nutty oak-forward barrels, high proof and high complexity barrels, and barrels with pronounced milk chocolate notes. The last group underwent a secondary maturation in toasted virgin American oak casks before being added to this intricate and seductive blend.
The foundation of BCS Gray Label Seagrass began with two groups of 16-year-old 100% Canadian Rye barrels – one with bright citrus and crisp green apple notes and the other with earthy spearmint notes. A portion of the first group was finished in Apricot Brandy casks, a portion of the second group was finished in Martinique rhum barrels, and a blend of the first and second groups was finished in Malmsey Madeira barrels. When each set of secondary maturation flavors peaked, those casks were pulled and slowly married into the final blend.
New Year. New beginnings. New traditions. Every autumn, we create a very special blend of bourbons as a toast to the year to come. Barrell New Year Bourbon 2022 is a tribute to the fresh possibilities and sense of renewal that every new year brings. After the last two years, we’re also feeling particularly grateful for the amazing community of friends and partners that has supported Barrell Craft Spirits.
BCS Gray Label Whiskey began with two selections of 24-year Canadian whiskey barrels: one set was fruit-forward and tropical, and one was woody, with a light floral aroma. A portion of the fruit-forward blend was transferred into Oloroso Sherry barrels and a portion of the floral and earthy blend was transferred into Armagnac casks. The remaining whiskey from the two groups was then combined to mingle. When the timing and flavor from the finishing casks peaked, the three components were carefully blended together.
The mature, spicy whiskey is front and center, reminiscent of wheat fields edged with wildflowers. There is a rare and noteworthy concentration of aroma, enriched with a candy sweetness and leafy earthiness from the finishing casks, that calls to mind a toasty Belgian waffle.
‘Barrell Bourbon Batch 028 is a blend of 10 and 11-year-old barrels created from a marriage of three distinct sub-groups of barrels. The first was aroma forward with notes of tropical fruit, citrus zest and exotic spices, identified to drive the nose of the final blend. The second group had a richness in the middle palate and a sweet, almond-like body. The third group was peppery and tannic, adding backbone and a savory, woodsy and earthy component. The final blend of Batch 028 allows each of these groups to shine through. It presents a bouquet of ripe tropical and sweet flower aroma backed up by a robust punch of rustic wood in the cadence and finish.’

Barrell Bourbon Batch 027 started with 6-year-old fruit forward barrels from Tennessee and 5-year-old spice forward barrels from Indiana. After these were blended together, 13 and 15-year-old barrels with more wood tannin and depth were layered in and a select number of 9-year-old barrels with a higher rye content were blended in for spice and assertiveness. Finally, 5 and 8-year-old wheated bourbon barrels were added to soften the batch, brighten the front palate, and solidify a cohesiveness to an otherwise extremely complex flavor profile.
Cinnamon donuts lead into earthy notes of walnut, leather, and fallen leaves. Subtly fruity, with hints of white currant and honeydew melon peeking out over the classic rye spice of angelica, catnip and black licorice.

We selected 9.5, 10 and 11-year-old barrels from different distilleries and rickhouse locations. The barrels were carefully blended, resulting in a sophisticated, balanced bourbon loaded with apple, gingerbread and honeyed corn notes.
We reserved a portion of Barrell Bourbon Batch 012 in the original barrels, which became the foundation for Barrell Bourbon Batch 014. We then selected additional 9-year-old bourbon barrels for their fruit notes, as well as a number of 14-year-old high rye barrels to deliver a bit of spice and oak. The result is complex and thoughtful – a nicely balanced spicy bourbon.
Rye Batch 002 is our second release that expands on our interpretation of a traditional rye whiskey, combining two very diverse ryes. We selected barrels of a 100% malted rye distilled and aged in Poland for 5 years in new charred #3 oak barrels from World Cooperage. We then blended it with an Indiana high malted barley rye that was aged in Indiana and Kentucky for over 5 years. The Polish Rye is dry, with a rich nutty flavor, and pairs beautifully with the lush Indiana Rye, resulting in a sweet and savory balance of malted chocolate and roasted cashews.

Barrell Bourbon Batch 021 is the culmination of two separate projects used to contrast one another. The first is a blend of 10-year-old barrels from TN, IN, and KY. We sorted these barrels into 3 groups by their most defining characteristics: one group of the most corn-forward and buttery barrels, one group of the woodiest barrels, and one group of easy-drinking lower proof barrels. The result was three different ingredients, each designed to bring a particular aspect to the final product.
