Backbone Uncut is our flagship bourbon and our first product ever launched (2010). We have done the exact same thing since batch# 1 – we bottle 10 x 53 gallon barrels at a time with minimal filtration and DON’T add a drop of water. We will let you add the water but we are firm believers that barrel proof whiskies have MORE flavor. Period. This is a central theme in our company and a guiding principle in every-thing we offer. Batches of Backbone Uncut are typically between 5 and 6 years old.
Backbone Prime is a blended bourbon meaning at least 51% of the blend is straight bourbon. Our proprietary blend includes different ages of Straight Bourbon and a combination of Straight Rye and Wheat whiskey. Lastly, we add just a little “old” Light Whiskey to boost the strength and complexity of the blend. The 104 proof makes this bourbon great to drink in an Old Fashioned, or sipped by itself.
First launched in 2011, Bone Snapper has become our biggest selling whiskey. The age of this whiskey is critical to its flavor profile. We target bottling Bone Snapper around the 30 month mark. At this age, we find a zestful spice and a herbaceous succulence with hints of further richness to come. We are adamant about presenting this whiskey at 108 proof and no lower. Not only does this help make it a wonderful drink on its own but it also has the strength to shine through in a well-made cock-tail. Remember our founding principal – extra proof = extra flavor.
Bone Snapper X-ray is our Reserve Straight Rye Whiskey. For X-ray, we use the same barrels and mash-bill as that used for Bone Snapper original but only after the barrels have aged 4 years or more. The remarkable characteristic of these barrels is how the flavor profile starts to evolve between 3 and 4 years old. The youthful spice (found in Bone Snapper original) starts to give way to a fuller, richer and more complex whiskey. After 4 years, with its new flavor profile fully set, we find this whiskey is ready for bottling.
Old Bones 15 Year is an elegant bourbon – a quintessential sipper. Imagine a late summer afternoon in the South, where the sun has gone under the horizon, and the heat of the day has subsided to a comfortable temperature. I picture rocking chairs and a creaky porch, and then this bourbon is what you are drinking with your favorite aunt or uncle. The conversation is deliberate and life affirming, and then you sip this whiskey in between listening and talking. You feel deeply satisfied but also hopeful. You don’t want the day to end and you wish you had bought another bottle of Old Bone 15 yr.
